Lime Syrup and Buttermilk Cake
Look at the image above for a few moments then close your eyes .. can you taste the golden buttery crumbs .. how about that tangy lime syrup that explodes with each mouthful?
From one who knows, it’s delicious from the first bite until the last .. let me share the recipe with you so you can taste for yourself .. the secret is in the buttermilk!!
Lime Syrup and Buttermilk Cake
OK .. get that oven pumping (180 degrees celsius); grease and flour ring pan (I used my bundt tin)
And get all your ingredients ready ..
Ingredients
250g soft butter
1 tb lime rind, finely grated
1 cup caster sugar
3 eggs, separated
2 c SR flour
1 cup buttermilk
Syrup
1/3 cup lime juice
3/4 cup caster sugar
1/4 cup water
Method
butter, sugar and rind into small bowl, beat till fluffy
beat in the egg yolks (one at a time)
put mixture in larger bowl
sift in 1 cup SR flour add 1/2 cup buttermilk, stir and repeat with another cup (sifted) SR flour and 1/2 cup buttermilk
stir till smooth
beat egg whites in small bowl till soft peaks form and fold into above mixture in two batches
spoon mixture into pan; bake approx. 1 hour
remove cake from oven and stand for 5 minutes
Syrup
add to a small saucepan, lime juice, caster sugar and water and stir over heat until sugar has dissolved and is all syrupy .. mmmm
bring to boil and remove from heat
all you need to do now is slowly pour the syrup over the cake while it’s still hot
and i suggest you start eating – while it’s still hot!!!
though served cold with some greek yoghurt .. is also divine!
